Ok so it’s zucchini week for us! Try this delicious tasty snack and so easy to make!
To make these you will need:
2 or 3 courgettes
Plain flour
Salt and pepper
2 eggs beaten
Oil for frying or EVOO spray if you want to cook them in the oven.
Method:
Wash and dry your courgettes. Discard both ends and then cut into discs, maybe 1/4 inch thick. Sprinkle on both sides with a little sea salt. Prepare your flour and then beat your eggs. Add salt and pepper to your eggs. For a twist on this you can add some fresh mint to your egg mix, obviously washed and cut up. Alternatively, a little of your favourite cheese grated into the egg mixture. (Parmesan, Pecorino).
Now start by preparing your oil. Heat in a pan. Once ready take the first courgette slice and coat in flour, then dip in the egg mixture and then straight into the frying pan. Turn them when ready and then remove when golden brown. Drain on kitchen roll.
If you prefer to bake them just prepare as above and put on a baking tray and spray with a little EVOO and put in a preheated oven at 175c or 350f for about ten minutes. Ovens vary so check them and remove once golden brown. Allow to rest for a few minutes and then serve. There are many delicious dips you can make for these. However, they are so tasty you can eat them on their own!!
