Meringue and berries cake: the recipe for a delicious dessert.
INGREDIENTS:
- For the base:
- 3 egg yolks
- 80 g of butter
- 50 g of sugar
- 1 tsp of vanilla sugar
- A pinch of salt
- 50 g of sour cream
- 1 lemon zest
- 230 g of flour
- Half a tsp of baking powder
- For the berries cream:
- 500 g of blackberries (or any other frozen berries)
- 80 g of sugar
- 100 ml of water
- Lemon juice
- For the meringue:
- 3 egg whites
- 1 tsp of vanilla sugar
- 1 tsp of lemon juice
- 130 g of powdered sugar
- 10 g of starch
- For decoration:
Almond flakes
METHOD:
1. In a bowl mix butter, sugar, vanilla sugar, salt, egg yolks and sour cream. Then flavor with grated lemon zest.
2. Aside mix flour and baking powder, sift them and gradually stir them into the dough.
3. Coat the bottom of a cake mold with the dough you made.
4. Bake in a pre-heated oven at 180° for 20 to 30 minutes.
5. In a sauce pan pour berries, sugar, starch, water and lemon juice.
6. Cook on the stove and stir continuously.
7. Cover the dough with the berries mixture.
8. Now make the meringue: whisk egg whites with sugar, vanilla sugar and lemon juice.
9. Now stir in powdered sugar a spoonful at a time. Lastly add starch.
10. Make a meringue layer on top of the cake, then decorate with almond flakes.
11. Bake again in a pre-heated oven at 150° for 30 minutes.
